The restaurant focuses on the world-famous American Midwestern BBQ, utilising dry and wet rubs to produce up to 20 different styles of BBQs, including choices such as Kansas City, St Louis, Memphis and Texas-style.

Chef Matthew L Birkenmeier formerly of the Ritz Carlton Rose Hall Hotel, who has had a lifetime of experience in serving up these dishes, is the man charged to create these great BBQ flavours.
"I started at a small bar grill in St Louis, Missouri, and moved on to the Hilton, Marriot and Millennium Hotels and then from there to riverboats travelling from New Orleans to St Louis, Minnesota, Cincinnati and Pittsburgh on the Mississippi, Ohio and Tennessee Rivers," Birkenmeier explained.
"That progressed to Royal Caribbean, Liberty of The Seas, Freedom of The Seas and Oasis of the Seas and from there on I just fell in love with the Caribbean because most of my routes were in the Caribbean," he noted, adding that he has a special love for Jamaica.
"Biggs BBQ Restaurant will have a little bit of everything to offer everyone, from locals to tourists," said Birkenmeir, pointing out that "there is nothing else like it on the strip because there are Jamaican Jerk and American BBQ under one roof, as well as sports entertainment such as Barclay's English Premier League, cricket and American football".
He argued that the "Hip Strip" is a preferred location by locals and tourists for entertainment, and the opening of any eatery, one that offers something different especially for locals is sure to add value to the "Hip Strip".
"BBQ is my specialty and I'm really excited about this venture, I just want both locals and visitors to enjoy our food, which is my passion and just to have an awesome experience," he stressed.
