Ahead of the opening, pastry chef and chocolatier Dawn Mitchell, overseer of The Pâtisserie, told Thursday Life, "we want to showcase the artisan chocolates we have prepared individually by hand, and we have nine flavours that we are starting with and, based on customer reaction, we'll possibly add more." The introductory flavours, Mitchell noted, include pep-o-country mint, home-grown rosemary ganache, hazelnut coconut (from the Husseys' Hampden Farm in Trelawny), orange confit, Rum Fire raisin and cherries, Blue Mountain coffee caramel and butter pecan.

Asked what separates the new enterprise from competitors, Mitchell responded, "We are very focused on detail and presentation; we're not churning out things here and there is a huge balance between quality and taste."
Looking to capitalise on its pre-Christmas launch, the pastry chef said for the holiday season, The Pâtisserie will feature seasonal-decorated artisan chocolates and truffles, French macaroons in raspberry and pistachio flavours, individual fruit cakes and petit fours.
Those in search of cute (and tasty) gift ideas could do well to take advantage of the pastry spot's for-order wrapped treats -- ranging from Santa Claus -, pine-tree, and gift box-inspired petits fours or chocolate truffles starting at $200 each; three-inch Marzipan fruit cakes for $1,800; and French macaroons at $80 a pop.
